I can bake! I can bake!

I’ve been a frustrated baker for years now. Why? Because we don’t have an oven at home. So every time I see a recipe that says “Pre-heat oven at 350F…”, I just give out a sigh of desperation. But when a friend a told me that she bakes using a turbo broiler, my hopes went up. I didn’t try it immediately. After gathering enough courage, I decided to look for an easy cupcake/muffin recipe. I immediately thought of making a carrot cupcake/muffin because my parents are both diabetics. Thank God I’ve discovered this recipe. I know it sounds funny but I was really nervous as I watch the muffin rise! I prayed to all the desserts gods to make this work. And it did! My Mother even said that of all of my food experiments, this is the BEST! Wohoo!

I think I got addicted to baking.

If I’m in a dessert shop, trust that I will choose a slice of Banana Toffee (Cream) Pie or Cheesecake (or both!). That’s why I am always in search of shops that sell these desserts or recipes so that I can prepare them on my own. So here I am sharing with you my latest finds:

From Aileen Siroy’s photoblog, she whipped up a super easy Banana Cream Pie.  Not only that it’s super easy (store bought pie crust+peanut butter+bananas+cream!), the photos are lovely!

A new blog that I recently discovered is Mochachocolate-Rita and she shared her Super Easy Chocolate Cheesecake. I rarely see chocolate cheesecakes around, so this is worth a try!

I’m really excited when I learned that Mom & Tina’s will have a new branch along Katipunan. So barely a few weeks after it opened, off we went to have lunch.  Since my friend and I want something cheesy, we ordered Shepherd’s Pie and Chicken Spinach Lasagna. I love the serving size of their pasta and potato dish. It’s full and filing. It won’t disappoint. Careful though, it’s hot!

On a separate visit, I ordered their Fettucine all’ Amatriciana. I love it because there is a good balance of pasta, tomatoes and bacon. Really yummy and filling!  (Sorry no photo!)
